Thanksgiving 2008, our last in Ellijay

I am sure you are all making your Thanksgiving plans.  We haven't spent a Thanksgiving in Atlanta in years.  We are all heading to Lake Keowee.  
What are your traditions?  Do you call it Dressing or Stuffing?  We're stuffing but Mark calls it dressing.  What are your must have dishes to make your Thanksgiving meal perfect?
